National Mom’s Nite Out is the first nationally organized celebration of motherhood Intended to bring together today’s moms, physically and virtually, The National Mom’s Nite Out will unite over 150 social media groups, companies, local playgroups, mommy bloggers and mother social networks in giving moms a well deserved night off.

The evening will consist of local events held across the country, as well as mom-organized parties and virtual activities. To allow moms everywhere to join in on the fun, mothers will be invited to throw their own mom’s nite out event by downloading party ideas and elements from The National Mom’s Nite Out website. The night of the event moms can join in on the fun through online chats and tweet-ups.

Cock-a-doodle-do....it's breakfast time at the Elliott household.

 My family are city dwellers and sometimes we have to get back to nature and enjoy the country life. We like to stay "farm fresh." How does my family stay "farm fresh"?

Publix offers a lot of great recipes and I always love to try new ideas. I have a difficult time getting my family to eat fish but with Publix Best Meals Happen at Home fish is the new "white meat" in our house!

If you have a picky eater why not try this great tasting recipe my family gave two thumbs up!

Lemon Pepper Fish Tacos:

Prep time: 20 Min
Start to Finish: 20 Min
Makes: 5 servings (2 tacos each)


2 tablespoons all purpose flour
1 egg
1 tablespoon water
1 cup Progresso® Lemon Pepper Panko Crispy Bread Crumbs
1 lb white fish fillets (such as tilapia or catfish)
2 tablespoons vegetable oil

10 Old El Paso® Flour Tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package)
1 medium avocado, pitted, peeled, and chopped
1 medium tomato, seeded, diced
2 teaspoons lemon juice
2 tablespoons chopped fresh cilantro
1 small jalapeño chile, seeded, finely chopped if desired
2 cups shredded lettuce
1 small lemon, cut into wedges

In shallow dish, place flour. In another shallow dish, beat egg and water. In another shallow dish, place bread crumbs. Coat fish with flour. Dip into egg mixture; coat well with bread crumbs.
In 12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 6 to 8 minutes, turning once, until fish flakes easily with fork. Cut into 30 bite-size pieces.
Meanwhile, heat tortillas as directed on package. In medium bowl, mix avocado, tomato and lemon juice. Stir in cilantro and jalapeño chile.
Fill tortillas with fish, avocado mixture and lettuce. Serve with lemon wedges.

Oven Method Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Follow step 1 above. Place fish in baking dish; drizzle with 2 tablespoons melted butter. Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Continue as directed in recipe.

Icky Foam*

The Masterpiece:

This cool concoction delivers a satisfying squishiness and a bit of self-expression, yet still scores low on the mess-o-meter.

Ingredients For Fun:
  • Zipper-slide fastener sandwich bag
  • Paint or food coloring (In honor of St. Patty's Day we're going green of course!)
  • Shaving cream, unscented (This is a plus for me.Cameron is allergic to perfumes.)
  • Metal pushpin
How To Make It:
  1. Fill the sandwich bag 2/3 with shaving cream.
  2. Add a tablespoon of paint or food coloring.
  3. Squeeze out air and seal up bag.
  4. Squish the paint and foam together to make cool patterns and designs, and watch as the shaving cream turns colors inside bag.
  5. Take the bag outside and poke a small hole in it with pushpin to “decorate” the sidewalk like a pastry chef.
* Make sure you supervise all cooking and craft creativities. I recommend food coloring. It's natural based and much easier to deal with than paint.

The first “Inside the Crayon Box” live chat is Wednesday, March 7 at 9 p.m. EST.
